Buffalo Skirt Steak with Bleu Cheese Sauce
Ingredients:
- 2 lbs skirt steak
- Salt and pepper to taste
- 1/4 cup hot sauce
- 2 tbsp unsalted butter
- 1/4 cup crumbled bleu cheese
- 1/4 cup sour cream
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/4 tsp Worcestershire sauce
- 1/4 tsp onion powder
- 1/4 tsp dried parsley
- 1/4 tsp dried dill
- 1/4 tsp dried chives
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 cup chopped green onions, for garnish
Instructions:
Warm the grill up to high heat
On both sides, sprinkle a lot of salt and pepper on the skirt steak
Put butter and hot sauce in a small saucepan
Melt the butter over low heat, stirring every now and then
Take the pan off the heat and add the crumbled bleu cheese
Mix it in until it melts
Put minced garlic, Worcestershire sauce, onion powder, black pepper, salt, dried parsley, dried dill, dried chives, and lemon juice in a bowl
Add the sour cream and mix it all together
Combine well by mixing
For medium-rare, or as done as you like, grill skirt steak for 3 to 4 minutes on each side
Move the steak from the grill to a cutting board and set it down for a few minutes
Cut the steak into thin strips across the grain
Add buffalo bleu cheese sauce to the steak and top it off with chopped green onions
