Pea Shoot, Radish, and Avocado Salad



A refreshing and healthy salad featuring the crispness of radishes, the creaminess of avocado, and the delicate flavor of pea shoots. Perfect for a light and nutritious meal or as a side dish.

Ingredients:

  • 2 cups pea shoots
  • 6-8 radishes, thinly sliced
  • 1 ripe avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

Put the pea shoots, radishes, avocado, and cilantro in a large bowl and mix them together

To make the dressing, mix the olive oil and lemon juice in a small bowl with a whisk

Pour the dressing over the salad and gently toss it all together

Add pepper and salt to taste

Serve right away and enjoy!
