Kolkata Egg Roll
A popular street food from Kolkata, this egg roll is a delightful blend of scrambled eggs, sautéed vegetables, and Indian spices, wrapped in a warm paratha or roti.
Ingredients:
- 4 eggs
- 4 parathas or rotis
- 1 large onion, thinly sliced
- 1 large potato, boiled and thinly sliced
- 2 green chilies, finely chopped
- 1/2 teaspoon chaat masala
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
Instructions:
In a bowl, beat the eggs with salt and red chili powder
Heat a teaspoon of oil in a pan over medium heat
Pour the beaten eggs into the pan and scramble them until cooked
Set aside
Heat the remaining oil in the same pan
Add sliced onions and green chilies
Saut until onions turn translucent
Add the boiled potato slices and saut for a few minutes until they are lightly browned
Sprinkle chaat masala and garam masala over the mixture
Mix well
Warm up the parathas or rotis on a skillet
Place a portion of the egg mixture onto each warm paratha or roti
Roll them tightly
Serve hot, optionally with ketchup or chutney
