Strawberry & Asparagus Black Rice Sushi



With this vegan sushi, which is made with strawberries and asparagus on top of black rice, you can enjoy the bright flavors of spring.

Ingredients:

  • 1 cup black rice, cooked
  • 4 nori seaweed sheets
  • 8 asparagus spears, steamed
  • 1 cup strawberries, sliced
  • 1 avocado, sliced
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp salt

Instructions:

Put salt, maple syrup, and rice vinegar in a bowl and mix them together

Smooth out the cooked black rice on top of the nori sheets

On one end of each nori sheet, put slices of avocado, asparagus, and strawberries

Use a sushi mat to roll it up tightly

Cut each roll into six to eight pieces

Put it on the plate with pickled ginger and soy sauce
