Chicken Tortellini Soup
A comforting and hearty soup featuring tender chicken, cheese-filled tortellini, and flavorful vegetables in a savory broth.
Ingredients:
- 2 cups chicken broth
- 1 cup cooked shredded chicken
- 1 cup tortellini
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups water
- Grated Parmesan cheese for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Toss in the chopped onion, carrots, and celery
About 5 minutes of cooking will soften the food
Cut up some garlic and add it
Cook for one more minute
Add water and chicken broth
Bring up the temperature
Add the tortellini, shredded chicken, and dried thyme once the water starts to boil
Lower the heat to a low level and cook the tortellini for about 7 to 9 minutes, or until it is soft
Add pepper and salt to taste
Grate some Parmesan cheese on top and serve hot
