Keto Roasted Beet Salad
Ingredients:
- 3 medium beets, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 shallots, thinly sliced
- 1/4 cup fresh tarragon leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup extra virgin olive oil
Instructions:
Preheat the oven to 400F 200C
In a bowl, toss the sliced beets with olive oil, salt, and pepper until evenly coated
Spread the beets in a single layer on a baking sheet lined with parchment paper
Roast in the preheated oven for 25-30 minutes, or until the beets are tender and slightly caramelized
Meanwhile, heat the extra virgin olive oil in a skillet over medium heat
Add the thinly sliced shallots and cook, stirring occasionally, until golden brown and crispy, about 5-7 minutes
Remove the crispy shallots from the skillet and place them on a paper towel-lined plate to drain excess oil
In a small bowl, combine the chopped tarragon and basil with the extra virgin olive oil to make the herb-infused oil
Once the roasted beets are done, arrange them on a serving platter
Drizzle the herb-infused olive oil over the roasted beets
Top the salad with crispy shallots
Serve immediately and enjoy!
