Mini Chocolate Poke Cakes
Ingredients:
- 1 box chocolate cake mix
- 3/4 cup hot fudge sauce
- 1 cup heavy cream
- 1 1/2 cups semi-sweet chocolate chips
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips for garnish
- Whipped cream optional, for topping
- Fresh berries optional, for garnish
Instructions:
Prepare the chocolate cake mix according to the package instructions and bake in mini cake pans
Allow the cakes to cool completely
Using the handle of a wooden spoon, poke holes in each mini cake
Heat the hot fudge sauce in the microwave until warm, and pour it over the mini cakes, allowing it to seep into the holes
In a saucepan, heat the heavy cream until it just begins to simmer
Remove from heat and add the semi-sweet chocolate chips
Let it sit for a minute, then stir until smooth to create a ganache
Pour the ganache over the mini cakes, spreading it evenly to cover the surface
In a small bowl, mix the unsweetened cocoa powder, powdered sugar, and vanilla extract
Sprinkle this mixture over the ganache layer
Garnish each mini cake with mini chocolate chips and, if desired, whipped cream and fresh berries
Chill the mini chocolate poke cakes in the refrigerator for at least 30 minutes before serving
