Smashed Plantain Pulled Pork Sliders
The flavors and textures in these Smashed Plantain Pulled Pork Sliders go well together. The soft pulled pork goes well with the crunchy fried plantains, and the coleslaw gives it a nice crunch. Great as an easy and filling snack or as an appetizer at a party.
Ingredients:
- 2 ripe plantains, peeled and sliced
- 1 pound pulled pork
- 1/2 cup barbecue sauce
- 1/2 cup coleslaw
- 8 slider buns
- 1/4 cup mayonnaise
- 1/4 cup sliced pickles
- Salt and pepper to taste
- Oil for frying
Instructions:
Heat oil in a frying pan over medium-high heat
Fry the plantain slices until they turn golden brown, about 2-3 minutes per side
Remove and place them on paper towels to drain excess oil
In a separate pan, heat the pulled pork with barbecue sauce until it's heated through
Split the slider buns and toast them in the oven until they're lightly browned
Spread mayonnaise on the bottom half of each bun
Layer with a slice of fried plantain, a generous portion of pulled pork, coleslaw, and sliced pickles
Top with the other half of the bun and secure with a toothpick
Serve the Smashed Plantain Pulled Pork Sliders with extra barbecue sauce for dipping
