Traeger Smoked Turkey Legs
Ingredients:
- 4 turkey legs
- 1/4 cup olive oil
- 2 tablespoons paprika
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons dried thyme
- 2 tablespoons dried oregano
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon cayenne pepper adjust to taste
- Wood pellets for Traeger smoker
Instructions:
Set the Traeger smoker's temperature to 225F 107C
To make a spice rub, combine olive oil, paprika, onion, garlic, and thyme powders in a bowl with salt, black pepper, and cayenne
Make sure the turkey legs are thoroughly coated by evenly rubbing them with the spice mixture
Transfer the turkey legs to the grates of a preheated Traeger smoker
To check the internal temperature of a turkey leg, insert a meat thermometer into it
For 34 hours, or until the internal temperature reaches 165F 74C, smoke the turkey legs at 225F 107C
Not required: For the final 15 to 20 minutes, raise the Traeger temperature to 375F 190C in order to crisp up the skin
When finished, take the smoked turkey legs out of the smoker and give them a few minutes to rest before serving
