Moist Double Chocolate Cookies and Cream Cupcakes with Cream Cheese Frosting
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup buttermilk
- 2 tsp vanilla extract
- 1 cup chocolate chips
- 12 chocolate sandwich cookies Oreo-style, crushed
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 tbsp milk
- Crushed cookies for garnish
Instructions:
Start by heating the oven to 350F 175C
You can line a muffin tin with cupcake liners
Mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl with a whisk
First, beat the eggs in a different bowl
Then, add the buttermilk, vanilla extract, and vegetable oil
Combine well
Stir the wet and dry ingredients together until they are just combined
The chocolate chips should be carefully mixed in
Put half of the batter into each cupcake liner
Put some broken cookies on top of the batter in each liner
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
From the oven, take them out and let them cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
Melt the butter and cream cheese together, then beat them together until the frosting is smooth and creamy
Mix in the vanilla extract and powdered sugar until everything is well mixed
One tablespoon at a time, add milk until the frosting is the consistency you want
Put the cream cheese frosting on top of each cupcake after it is completely cool
You can pipe or spread it on
Add more crushed cookies as a garnish
